The mash bill features 70% non-GMO white corn, 25% Elbon rye, and 5% wildfire malted barley, reflecting a commitment to supporting local agriculture and creating a uniquely Texan product. One of the standout features of Still Austin is its 50-foot column still, affectionately named “Nancy.” Designed in collaboration with master distiller Mike Delevante and the renowned Scottish still maker Forsyths, Nancy plays a critical role in producing a clean and precise distillate.
