After leaving a career in New York finance during the 2008 recession, Spiegel turned his passion for homebrewing and winemaking into a focus on whiskey production. The distillery employs a Scottish-style double pot still distillation process, which helps retain the rich flavors of the grains used in their mashbills. Sonoma Distilling Co. sources high-quality grains, including rye, wheat, and malted barley, with a focus on creating unique flavor profiles. One of their standout products is Sonoma Cherrywood Rye, which features a mashbill of 80% rye, 10% wheat, and 10% cherrywood-smoked malted barley. The cherrywood smoking process imparts a subtle smokiness to the whiskey, complementing the natural cherry-like flavors of the rye grain. Aged for a minimum of two years, this whiskey offers notes of cherry, orange, and baking spices like ginger and cinnamon.
