PCS Distilling Co., located in the NuLu neighborhood of Louisville, Kentucky, is a craft distillery with a rich history and a focus on small-batch production. Founded by Keith Hazelbaker, PCS occupies a historic building on Baxter Avenue that has served various purposes over the past century, including a pharmacy, bakery, and even a nightclub. The building’s colorful past includes Prohibition-era smuggling tunnels and a 2015 ATF raid under previous ownership, adding a unique layer of intrigue to the distillery’s story. Since its founding, PCS has focused on producing high-quality spirits, including gin, vodka, rum, moonshine, and its signature NULU bourbon and rye, named after the trendy NuLu district. While waiting for its own bourbon to age, PCS sources whiskey from MGP, blending it with care to create distinctive products. The distillery emphasizes a hands-on, back-to-basics approach, sourcing local ingredients and crafting each batch with precision. Public tours highlight the building’s past, including smuggling tunnels and artifacts, while offering insights into the distillation process.
