Hidden Barn apart is dedicated to "doing things the hard way." Their distillation process includes using a sweet mash, wild yeast harvested by hand, wooden cypress fermentation tanks, and double or triple pot distillation. These traditional techniques prioritize rich, complex flavors over efficiency. Their whiskey is matured at a barrel entry proof of 110, undergoing no additional filtration to maintain its viscosity and character. The name "Hidden Barn" honors Kentucky's black barns, a historic symbol of solidarity against prohibition-era distillery crackdowns when communities painted their barns black to protect their whiskey operations.
